Tomato, Feta PDO and Fresh Herb Tart

Feta is a traditional and certified Greek cheese with high nutritional value and rich taste that goes well with almost all food products. It comes from sheep’s milk, or a mixture of sheep and up to 30% goat’s milk.

Look for the PDO sign (Protected Designation of Origin) which ensures the quality, the uniqueness and the authenticity of Feta.

Ingredients
• All-purpose flour for dusting
• 1 sheet frozen puff pastry
• Sea salt & Black Pepper
• 180 gr Crumbled feta cheese
• 2 cups of fresh cherry tomatoes, cut in half
• 3 medium fresh tomatoes, thinly sliced
• 2 tbsp thyme and oregano, roughly chopped


Instructions
Preheat an oven to 200°C and line a rimmed baking sheet with archment paper.

Unfold the pastry sheet on a lightly floured work surface and roll out into a 23-by-33-cm rectangle about 3 mm thick. Transfer the rectangle to the prepared baking sheet. Using a fork and prick the rectangle evenly all over. To create a border on the tart, fold over 12 mm of the pastry all the way around the edge. Arrange the cherry tomato halves, sliced tomatoes and feta evenly on top of the pastry. Sprinkle evenly with the oregano, season with salt and pepper, and top with the thyme.

Bake about 20 minutes until the pastry is puffed and golden brown. Then, remove from the oven and garnish with the oregano, cut the tart into pieces and serve.
