Zucchini rolls with Feta

For this recipe you will need:

3 large zucchini, cut into thin slices lengthwise

200 g. feta PDO, crushed with a fork

2 tbsp yoghurt

2 tbsp olive oil

1 tsp dill or fresh mint finely chopped

freshly ground green pepper



  1. Slice the zucchini lengthwise into thin slices. Place in a colander and sprinkle with salt. Stir and leave to drain. Next lay the zucchini strips into a wide, shallow pan and drizzle with olive oil.
  2. Preheat broiler and when rack is heated grill the zucchini on both sides until soft and pliable.
  3. Using a fork, mix feta, yoghurt, dill and fresh mint in a bowl. The mixture should be thick and firm. Add a pinch of green pepper and stir gently.
  4. Place 1 tsp of the feta mixture onto one end of each zucchini strip. Roll up and arrange on a platter seam side down. Refrigerateatleast2 hoursbeforeserving.
